Peanut Butter Cookies

On Monday I made peanut butter cookies! Yummy! I love this recipe so much and they always turn out so gooey and peanut buttery!

You will need:

2cups regular flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cup dark brown sugar (lite brown works too)
1 1/4 cup white sugar
1 cup salted butter or margarine
3 large eggs
1c creamy peanut butter
2 teaspoon vanilla
1.) Mix the flour, baking soda, and salt together in a bowl.
2.) In a different bowl combine both sugars, butter, eggs, peanut butter, and vanilla. Mix well.
3.) Combine the two mixes and stir until you have a soft dough mixture. It will look like this:

4.) Drop cookies on a baking sheet (I line mine with aluminum foil for easy cleanup, sprayed with Pam). I use a tablespoon sprayed with Pam to get uniform cookies. Be careful not to make you cookies any bigger than a tablespoon or they may run together while baking (like some of mine did) They look like this:

5.) Grab a fork and a small bowl of a little white sugar. Dip the fork in the sugar and then press down cookies in a criss cross pattern with the fork, getting some sugar on the fork each time keeps the fork from sticking to the cookies. They look like this:

6.) Bake at 300 degrees for 15-18 minutes. Be sure to keep checking them and pull them out just as the edges start to brown for optimum gooeyness. This mix makes about 4 dozen; plenty to share with friends and family. Enjoy!
